On October 8, 2023, the Swiss Brewers Cup took place in Zurich. Nicola Schäppi of Coffee Space GmbH was able to secure the vice-championship title despite strong competition. His unwavering passion and dedication to coffee were evident throughout the competition.
Nicola convinced the jury with a perfect presentation of his three cups of coffee. He served an exceptional Pink Bourbon from Colombia, which scored with a tropical bouquet, refreshing acidity, and silky texture.
“I am very happy that I was able to participate in the Swiss Brewers Cup for the third time,” said Nicola Schäppi after the competition. “It was a very exciting competition with very strong competition. I have learned a lot and I am glad that the eight-month preparation paid off.”

The coffee
This Pink Bourbon was grown and processed by Wilton on the Granja Paraiso 92. Wilton’s achievement lies not only in growing coffee of excellent quality, but also in his scientific approach to controlled fermentation. He has a state-of-the-art laboratory on his farm to research and improve his processing techniques.
The coffee is grown in the sunniest region of Colombia on volcanic soil at an altitude of 1,750 meters. The temperature can drop significantly at night, slowing down the cherry maturation process and helping them develop a highly complex flavor profile.
However, the key to the unusual tropical flavors of Pink Bourbon lies in fermentation. To achieve controlled fermentation, the coffee is first sterilized before yeast is added. After peeling the coffee seeds and completing the second fermentation, a thermal shock process with hot and cold water is carried out. This seals the bean and locks in the delicate flavors.
