Fermentation
The coffee is fermented in two steps. First, 5 days (120 hours) anaerobically with added kiwi pulp, and then again for 3 days. After fermentation, it is dried on raised beds using the honey process.
Cultivation
The coffee is grown on a 70-hectare farm near the village of San Bernardo de los Farrallones, Ciudad Bolivar, in Colombia. The farm is located at an altitude of 1,720 meters above sea level.
