Our Coffees
Quality
For every new coffee, we first develop an optimal roasting profile on a sample roaster, which we then scale up on the production roaster. This allows us to explore the full potential of each bean without wasting kilograms of coffee, and to obtain the benchmark we want to achieve on the production roaster.
We offer coffees that are not 100% perfect from the scaling process at a reduced price, thus avoiding food waste.
Specialty Coffee
This quality is achieved with a lot of manual work and dedication. Such coffee should be roasted gently to preserve the characteristic flavor profile of the coffee. We exclusively carry specialty coffees – coffees that we enjoy drinking and are gentle on the stomach and nerves.
Industrial Coffee
In this segment, price is more important than quality and defective beans are the rule, not the exception. Since the defects also strongly affect the taste of the coffee, such coffees are traditionally dark roasted. This allows the roasting aromas to overpower the coffee's own notes. We do not carry such coffee under our label.
Sourcing
We source our green coffee beans from a wide variety of sources. The goal is to have a sensorially broad range of coffees. We want to represent the vastness of the coffee universe and invite you to discover it. To this end, we explore hundreds of coffees each year and only the highlights, beans with a surprise factor, are added to our assortment.
Our obsession with quality is actually exclusively served by small farms and sustainably oriented cooperatives. Only a lot of manual work, knowledge, and even more heart and soul make such outstanding coffees possible. This is why our coffees automatically fit into our social and ecological value concept as well.
Small but modern
We are the first in Switzerland to use a Roest P3000, by far the most modern small-batch roaster in the world. This enables us to offer the highest possible quality from small Nano Lots to high-volume house coffees.
With its 19 sensors and automatic delta correction, the roasting result is always on point throughout the year, regardless of weather or season! This is also exciting for customers who would like to have their coffee custom roasted with us.
