Castillo and Colombian varieties are decaffeinated for Decaf using the sugarcane method. In this process, the green coffee is lightly steamed to open the beans and then washed with ethyl acetate (EA), a naturally occurring alcohol derived from fermented sugarcane. This removes the caffeine while preserving the natural flavors of the coffee. The beans are then steamed again to remove any remaining EA and carefully dried, resulting in a Decaf coffee that retains much of its sweetness, body, and character.

Origin
This intense DECAF comes from the Huila region in Colombia, which is famous for balanced coffees with bright acidity, clear profile, and lingering sweetness. Coffee has been grown at the family-run Finca Nazaret since 1940.
